Sunday - Vegetable omlet

Today's dinner was...





Cold Soba noodles
Vegetable omelet
Potato pancakes
(again! requested by my husband)



Um... I'm completely out of vegetables.
So I had to use a lot of frozen veggies tonight.
Plus we were out all day until almost 6pm, I had less than 30min to prepare everything!



My husband really liked the potato pancakes last night, I made them again (super easy too!).

And Soba noodles, all you have to do is boil them and wash them. EASY! And my son LOVES soba noodles very much too :)


So, for the recipe, I guess I could put Vegetable omelet, but I really didn't put much of an effort to it either ;p All I had to use was whatever I had left in the fridge.
But here it is anyway...


Vegetable Omelet

Eggs...3
Frozen mix veggies...1/2 cup
Tomato...1/4 (whatever was left in the fridge)
Salt & pepper...1/4tsp each
Marinara sauce...3tbs


1) Mix them all together with salt and pepper.
2) In a medium skillet, spray some oil, cook them and fold in half.
3) Put 3 tbs of marinara sauce.




It was so easy and quick.
But they were very tasty! Also we had some leftover food from last night too, so it ended up with a lot of food to eat tonight :)



I feel pretty good about accomplishing $70/week budget cooking past week.
It gets hard updating my blog every night since I have two small children, but at least I'm having a blast. Hopefully I can keep up. Blog and cooking.

I've gotta go to grocery shopping tomorrow for sure, will see what I'll be cooking this week!


OH! I almost forgot to post it, here's my husband's bento for tomorrow.

I went to Costco trip.
Bought some apples, meat and salmon. I will write about how I will be using and storing all those meat tomorrow.
I gave away half of apple to my father and brother-in-law since they were gonna be on the road for a couple of days. They need some healthy snacks!

By the way though, Costco apples come up to 66 cents each...which is more than Trader Joe's apples. I guess I will be getting apples from TJ then! :)
