Saturday - Potato pancakes

Tonight's dinner was...






Chicken stir fry
Chirashi sushi
Potato pancakes
Miso soup with tofu





So, today is Saturday. I'm running out of vegetables...I've got a lot of potato though...let's see what I can make!


Oh but wait, my husband just told me his dad is coming to visit us all the way from Hawaii today! Surprise visit!!! He's coming down to LA with my brother-in-law from San Jose around dinner time. Let's make something festive looking dinner then :)



Recipes of the day:


Chirashi Sushi


Like I mentioned in the beginning, I do short-cuts in my cooking.
For Chirashi Sushi, I'm using Mix-and-Ready package I have stocked in my pantry.







1) Mix this package with steamed rice.
2) I used 1/3 of salmon fillet and 10 shrimp sliced in half as toppings.
3) Garnish with Shiso leaves and seaweed (came with mixture).



Chicken Stir Fry



Chicken breast...1 1/2 breasts
Takenoko (bamboo shoot)...1/3
Carrots...(15 baby carrots)
onion...1/2
Potato starch...3tbs

sauce 1
*soy sauce...2tbs
*grated ginger...1tsp
*minced garlic...1tsp

sauce 2
*water...1/4 cup
*soy sauce...3tbs
*sugar...2tbs
*sake...1tbs


1) Cut vegetables and chicken in bite size
2) In a medium bowl, marinate chicken with sauce 1 mixture and put aside
3) Cook veggies with salt and pepper on a high heat until halfway cooked, then put on a plate. Put aside.
4) After marinating chicken for 10min (or marinate 30m in the fridge), coat chicken with 3tbs of potato starch.




5) Cook chicken on a high heat until both sides get golden brown.



6) Add vegetables to cook, then put all the sauce 2 ingredients until sauce gets thicken.


Potato pancakes

Potato...3 grated
Chicken bouillon...1/2 crushed
Frozen edamame beans and corn...1/4 cup each
Flour...3tbs


1) If you have food processor, blend potatoes, chicken bouillon and flour all together until smooth. For me, I used this↓↓↓




hahaha. When I first got it a couple of years ago, I thought I would use it super often! But the reality? Rarely. ha ha. Maybe I use them when I make milkshake for my son. But that doesn't happen often either! I wish (now), I have a food processor instead...that would've been so much easier when I cook because Magic Bullet is a little too small sometimes :)


2) Add frozen veggies.
3) In a large skillet, put 1/2 to 1 tbs of sesame oil, then cook like mini pancakes!




4) Cook until golden color.



Tomorrow is Sunday, so there will be no bento!

My father and brother in-law finally met latest addition to our family, 3 and a half month old daughter!
This coming Wednesday is my father-in-law's birthday, so we got him a birthday cake! I wish I could say I made them too, but I got them from Whole Foods :)
We were all so happy for their surprise visit!!! Happy birthday Papa!!!
