Monday - Silver noodle salad

Here is today's dinner...







Fillet Mignon with onion mushroom
Silver noodle salad with a bed of Mizuna
Seasoned sweet potato
Tofu miso soup




I took a quick late nap with my baby this afternoon, by the time I woke up it was almost 5:30!!! We usually eat our dinner at around 6pm when my husband comes home.
So I was rushing to get everything ready...but my brain wasn't keeping up!
I was so disoriented, I couldn't think of a single dish to cook for tonight!

Then my cellphone beeps...


Looked over, it was a text message from my husband saying he can't make it home until 7pm!!! YAY!!!!!! I've got some time to prepare dinner---PHEW.



So let's see, these are the recipes of the day;


Steak with onion mushroom

Fillet Mignon---1 ziploc (1/3 of Costco size)
Onion---1/2 sliced
Mushroom---10 sliced
Oyster mushroom---1 sliced in bite size

*seasoning
*red wine---1/4cup
*brown sugar---1tbs
*soy sauce---1tbs



1) Cut fillet Mignon in desirable size, then coat with seasoning and olive oil.



I use Fresh & Easy's seasoning. I use this seasoning when I rub ribs too. I think this easoning works really well with any kind of meat, in my opinion :)

2) Put 1/2tbs olive oil and 1tsp minced garlic in a large pan, cook onion and mushrooms. To speed up the cooking time, splash a bit of white wine to steam cook.
Then put the veggies on the plate, and put aside.

3) In the same pan, cook beef on a high heat until both side are brown without any extra oil.





4) Put veggies back in the pan with beef, then add red wine, sugar and soy sauce. Cook for a minute or two.



Silver noodles with Mizuna


Silver noodles (Bean thread noodles)---1/3 pkg
Cucumber---1 (small Persian)
Carrot---8 baby carrots (julienned)
Shiitake mushroom---3 (sliced) I used dried shiitake.
Turkey deli meat---2 (julienned)
Cabbage---1/8 (shredded)
yellow bell pepper---1/4 (julienned)

dressing
*sesame oil---1.5tsp
*soy sauce---3tbs
*sushi vinegar---2tbs


1) soften dried bean thread noodles with boiling water. (Sorry, I forgot to take picutre of silver noodles...)

2) Cut all the veggies, soften noodles, and make dressing*.





3) Mix them all together with 1/2 of the dressing.




4) Make a bed of Mizuna in a salad bowl, put the rest of the dressing over Mizuna. Then put silver noodle mixture. As an optional, you can put some Japanese mayonnaise in between Mizuna and the noodle salad.




Well, I think that's how I cooked....I think...ha ha
I was slowly getting up as I was preparing for dinner tonight.

My baby girl caught a cold a few days ago, then from yesterday, my son got it too.
He usually goes to preschool on Mondays, but he was little too sick to get up this morning. I usually do my grocery shoppings while my son is in school, but today had to be modified...not so exciting ;p
I don't know if it was a good idea to take my sick kiddies out today...my son's sounding even worse tonight! It's mid May in Southern California, but today was only 66F! What's going on with the weather!?!?!?!? Where's the warmth???

Hopefully my kids get better soon, and I hope and HOPE that I don't get their germs!!! (although I know it's a wishful thinking since cold germs usually travel through everyone at our household...is it my husband's turn or mine next?)
