Friday - Pan fried Ganmodoki

Tonight's dinner was...

Pan fried Ganmodoki (Pan friend tofu fritter)
Salad
Potato pancakes
Soba noodles

I didn't know what to make for dinner, so I asked my husband if he has any requests. He said Soba and Potato pancakes, so I made a couple of more side dishes to complete our dinner menu.

Ganmodoki is very healthy and vegetarian!
I wanted to make something protein and something close to tempura.
Soba is really good when you eat with tempura or something fried. I didn't have enough oil (I kept forgetting to buy them) to make anything fried, I made pan fried tofu fritter.

Here's the recipe of the day:

Tofu---1pkg
Dried Hijiki---1/2cup
Dried Shiitake mushroom---2
Carrots---5 baby carrots
egg---1

*Konbu dashi (seaweed 'konbu' soup stock powder)---2tsp
*Salt---1/2tsp
*sugar---1tsp
*sesame---1tbs
*potato starch (or corn starch)---3tbs

1) Put tofu in microwave for 2-3 min on 1000W to get water out of them.
Use Extra firm tofu.

Highly recommended to put a folded paper towel underneath tofu to absolve all the water.

2) Smash tofu as you put them into a large mixing bowl.

3) Put all the ingredients including *seasoning ingredients.

*Cook dried Hijiki seaweed and dried shiitake in a boiling water in a small pot, then drain water.
*Jullien carrots, then wrap in a saran wrap, microwave for 35sec in 1000W.

If you can't find Konbu dashi, use Hondashi (Japanese fish stock powder).
I used Konbu Tea powder this time.

4) In a large pan, put 2 to 3tbs of oil (I used olive oil), then scoop out the mixture into the pan. Slowly cook both sides until golden color on a med. heat.

At the same time, cook potato pancakes on the other stove :)

My husband's birthday is coming up soon.
So I went to the mall to pick up a gift for him!
It's really difficult to shop for men, particularly my husband.
Well, I never thought it was difficult to shop for men, since I grew up with two brothers. But maybe that's because my brothers love clothes, and as long as I get them some kind of clothes by their favorite brands, they were happy.

My husband?

Not so easy...

He recently got himself a Droid (yes, the new one) phone.
So he requested nothing.
But, you know, I wanted to get him something...

Then, when I was walking in the mall, I saw a really fun looking toy! (for adult...well, not THAT kind of adult toys I'm talking about..;p)

I guess it's a popular toy nowadays. I see them everywhere!
Maybe it's one of those 'IT' toys for the moment.
Will see if he likes it!?

Today is Friday, no bento tomorrow! :)

Picture of the day...

I made raisin almond bread today! yum.
If you own a bread maker (home bakery), here's the recipe!

All purpose flour---1cup
Bread flour---3/4cup
Rice flour---1/4cup
Olive oil---1tbs
Salt---1tsp
Dried yeast---1tsp
Sugar---1tbs

*raisin---1/2cup
*almond halves---1/4cup
